Orange, Mint, Fennel and Walnut Salad

This tasty salad will help calm your mind and ease your stress and makes the perfect lunch stand-alone, or side with dinner.    

Ingredients (serves 1):

1/2 cup walnuts, roughly chopped
1 orange
1 tsp white wine vinegar
1 tsp honey
2 tsp olive oil
Pinch of salt
Pinch of pepper
2 cups watercress
1/2 cup mint

1 small bulb of fennel

Walnut Salad

Method:

  1. Pan toast the walnuts until they turn dark brown.
  2. Combine zest, orange, vinegar, honey, olive oil, a pinch of salt/pepper and fennel in a small bowl and leave to sit while the walnuts cook to cool.
  3. Place the watercress, mint, and fennel fronds in a bowl large enough to toss the salad in. When the walnuts are cool add the orange and fennel mix along with the dressing and walnuts.
